Sunflower Microgreens

Contain many antioxidants, anti-inflammatory, antimicrobial, and cardiovascular benefits. They also contain cancer-fighting compounds and antioxidants, about 5 to 10 times more than the mature plants. 

Broccoli Microgreens

Broccoli microgreens are particularly abundant in sulforaphane, a powerful compound known for its potential anticancer properties. Sulforaphane has been shown to activate detoxification enzymes, reduce inflammation, and support cellular health 

Pea Shoot Microgreens

Pea shoots  are an excellent source of: Anti-cancer qualities

Pea microgreens contain polyphenols, such as coumestrol, which may help lower the chance of developing stomach cancer. Additionally, Pea Shoots microgreens are high in antioxidants and carotene, which can help the body fight free radical damage that may cause cancer-related diseases. Pea Shoots also contain Vitamin C. In fact, one cup of pea microgreens contains 50% of an adult's recommended daily vitamin C, which can help protect the immune system.



Beet Microgreens

 Beet microgreens are not only packed with earthy tastiness they are also rich in vitamins A, C, K, iron, magnesium, and potassium. They contain betalains, potent antioxidants supporting heart health, boosting immunity, and aiding detoxification. High levels of folate and manganese in beets are essential for energy production and bone health. 

Microgreen Recipe of the Month

Spicy Avocado Toast  

(Adapted from The Ranch At Live Oak Cookbook)


Ingredients:

  • 2 slices multigrain or gluten-free bread, toasted
  • 1 ripe organic avocado, pitted, peeled, and sliced
  • 1/4 lemon, cut into 2 wedges
  • Kosher salt and freshly ground black pepper ( may substitute with Super Salt)
  • 1/2 cup of Spicy Salad Mix (may be replaced with a Mild Salad Mix) 
  • 1/4 teaspoon toasted sesame oil
  • 1 teaspoon sesame seeds, toasted

Instructions

  1. Divide avocado slices evenly and place on top of toast slices. Using a butter knife, carefully smash avocado slices. Squeeze lemon slices over avocado, sprinkle with salt and pepper or Super Salt, top with microgreens, drizzle with sesame oil and sprinkle with sesame seeds.
